Ingredients

  • Rice Flour - 2 cups (250gm or 16 tbsp)
  • Gram Flour - 1 cup (125gm or 8 tbsp)
  • Refined Oil / Melted Ghee
  • Carom Seeds (Ajwain)
  • Red Chilli Powder (Optional) Do not use Kashmiri Red Chilli Powder
  • Turmeric powder
  • Salt
  • Asafoetida (Hing)
  • White Sesame seeds
  • Oil, for deep frying

Instructions

  1. Strain the Rice flour and Gram flour separately.
  2. For Homemade Rice Flour: Grind soaked and dried raw rice into fine powder. Strain and store in an airtight container.
  3. Add 1 tbsp White Sesame seeds, 1/2 tbsp Carom seeds, 1/2 tbsp Turmeric powder, 1/2 tbsp Red Chilli powder (do not use Kashmiri Chilli powder), Salt to taste, and 4 tbsp Refined Oil/Melted Ghee to the strained Gram flour.
  4. Rub and mix everything well to make the Mudki super crispy. The flour mixture should be well incorporated.
  5. Gradually add required HOT WATER and knead to form a soft, non-sticky dough. The dough should be soft but manageable. Use around 1 cup + 3/4 cup of water or as needed.
  6. Let the dough rest for some time.
  7. Apply Oil or melted ghee to a mould to make shaping the Mudki easier.
  8. After 20 minutes, put the soft dough inside the mould, filling it about 3/4 full.
  9. Shape the Mudki on a butter paper or an oil-greased plate. If the dough breaks while shaping, add a little more water to make it pliable.
  10. Gently seal or press both ends of the Mudki to secure the shape.
  11. Allow the Mudki to set at room temperature for 4-5 minutes before frying.
  12. Heat oil in a pan on low-medium flame. Gently slide the Mudki into the oil using a flat spatula. Do not flip them immediately.
  13. Flip the Mudki once they start to float on the surface. Fry on low flame until they turn a lovely yellow-brown color and become crispy.
  14. Strain the fried Mudki to remove excess oil.
  15. Fry the remaining Mudkis in the same way.
  16. Once completely cool, store the super crispy ""Mudkis / Chaklis"" in an airtight container.
