Ingredients
- 1 Cup Rice Flour
- 2 tbsp Besan Flour (Gram Flour)
- 1.5 tbsp Fried Gram Flour (Pottukadalai Mavu)
- 1 tsp Jeera (Cumin Seeds) or Sesame Seeds
- 1/4 tsp Hing (Asafoetida)
- 2 tsp Butter (Homemade or Store-Bought)
- Salt, as required
- Water, as required
- Oil, for deep frying

- Start by grinding the fried gram in a mixer to achieve a smooth powder.

Preparation:
- Measure all the ingredients and keep them readily available.

Dry Roasting Besan:
- In a pan, dry roast the besan flour on low flame for about 1 minute, or until the raw smell disappears.

Sieving Flours:
- Sift the rice flour using a sieve. Add the roasted besan flour and fried gram flour, then sieve all the dry ingredients together.

Mixing Dry Ingredients:
- In a wide mixing bowl, combine the sieved flours, jeera or sesame seeds, hing, and butter.
- Add the required amount of salt.

Kneading Dough:
- Gradually mix in water, little by little, to form a soft, pliable dough. The dough should be slightly sticky but not dry, as this makes it easier to press.

Greasing Chakli Press:
- Grease the chakli press with oil, take a portion of the dough, and stuff it into the press using a star achu (nozzle). Keep the remaining dough covered with a damp cloth to prevent drying.

Deep Frying:
- Heat oil in a kadai. Check the oil temperature by dropping a small piece of dough; if it rises immediately, the oil is at the right temperature.
- Hold the chakli press over the oil and gently press it; the murukku will fall automatically. Fry in batches to avoid overcrowding the oil.
- Flip the murukku when it's half cooked and adjust the flame as needed.
- Continue turning the murukku until it turns golden brown and the sizzling sound in the oil subsides.
- Drain the fried murukku on a kitchen towel and repeat the process with the remaining dough.
