Introduction
When it comes to delectable South Indian snacks, Thenkuzhal Murukku undoubtedly holds a special place in the hearts of many. This crispy and savory spiral-shaped delight is a favorite during festive seasons, family gatherings, and even as an evening snack. Made with a unique blend of flours and aromatic spices, Thenkuzhal Murukku is a true delight for your taste buds. In this blog post, we bring you an easy and authentic Thenkuzhal Murukku recipe that you can make at home and enjoy its mouthwatering flavors.Ingredients
- 2 Cups Rice Flour or Idiyappam Flour (Homemade or Store-Bought)
- 1/2 Cup Urad Dal Flour
- 1 tbsp Butter (Homemade or Store-Bought)
- 1 1/2 tsp Jeera (Cumin Seeds)
- 1/4 tsp Hing (Asafoetida)
- Salt, as required
- Oil, for deep frying
- Begin by measuring and organizing all the required ingredients.
- Sieve the rice flour and urad dal flour twice to ensure a fine texture. This step is crucial to prevent murukku from breaking during swirling.
- In a wide mixing bowl, combine the sieved flours, jeera, hing, butter, and the necessary amount of salt.
- Gradually add water and start kneading the dough. The consistency should be soft and pliable; overly stiff dough can make it challenging to press. Cover the dough to prevent drying as you work.
- Grease the murukku presser with a little oil. Use a thenkuzhal achu (dye) for shaping the murukku.
- Stuff a portion of the dough into the presser and make swirls on the backside of a ladle. This method contributes to achieving a well-formed shape. Experienced individuals can make swirls directly in the oil.
- Heat oil in a kadai or pan. Test the oil temperature by dropping a small piece of dough – if it rises immediately, the oil is ready. Gently place 3 or 4 murukku in the oil, considering the size of the kadai.
- Fry the murukku over medium flame on both sides until they attain a golden color and the sizzling sound ceases. Repeat the process for the remaining dough.
- Drain the fried murukku on a kitchen towel. If required, pour a little oil and fry again to ensure even cooking and minimize oil absorption.
- Savor the delightful Thenkuzhal Murukku alongside Bombay Karachi Halwa.
Notes and Tips:
- If using store-bought urad dal flour, roasting is unnecessary.
- For a whiter appearance in the Easy Thenkuzhal Recipe, reduce urad dal flour to 1/4 cup.
- Ensure both rice flour and urad dal flour are finely sieved to facilitate smooth swirling.
- Choose either jeera or sesame seeds; avoid using both simultaneously.
- Do not exceed the mentioned quantity of butter to maintain murukku consistency and shelf life.
- Do not skip butter, as it enhances taste and crispiness.
- Butter can be replaced with 1 ladle full of hot oil for added crispiness and prolonged freshness.
- Maintain dough moisture by covering it to prevent drying, especially when preparing in larger quantities.
- Fry murukku in hot oil to prevent excessive oil absorption.
- As oil gets absorbed over time, ensure enough oil is used for frying.
- Store Thenkuzhal Murukku in clean, airtight containers for a shelf life of up to 10 days.
