Ingredients

  • 2 Cups Rice Flour or Idiyappam Flour (Homemade or Store-Bought)
  • 1/2 Cup Urad Dal Flour
  • 1 tbsp Butter (Homemade or Store-Bought)
  • 1 1/2 tsp Jeera (Cumin Seeds)
  • 1/4 tsp Hing (Asafoetida)
  • Salt, as required
  • Oil, for deep frying

Instructions

  1. Begin by measuring and organizing all the required ingredients.
  2. Sieve the rice flour and urad dal flour twice to ensure a fine texture. This step is crucial to prevent murukku from breaking during swirling.
  3. In a wide mixing bowl, combine the sieved flours, jeera, hing, butter, and the necessary amount of salt.
  4. Gradually add water and start kneading the dough. The consistency should be soft and pliable; overly stiff dough can make it challenging to press. Cover the dough to prevent drying as you work.
  5. Grease the murukku presser with a little oil. Use a thenkuzhal achu (dye) for shaping the murukku.
  6. Stuff a portion of the dough into the presser and make swirls on the backside of a ladle. This method contributes to achieving a well-formed shape. Experienced individuals can make swirls directly in the oil.
  7. Heat oil in a kadai or pan. Test the oil temperature by dropping a small piece of dough – if it rises immediately, the oil is ready. Gently place 3 or 4 murukku in the oil, considering the size of the kadai.
  8. Fry the murukku over medium flame on both sides until they attain a golden color and the sizzling sound ceases. Repeat the process for the remaining dough.
  9. Drain the fried murukku on a kitchen towel. If required, pour a little oil and fry again to ensure even cooking and minimize oil absorption.

  • If using store-bought urad dal flour, roasting is unnecessary.
