Ingredients
- 1.5 Cups Maida (All-Purpose Flour)
- 1/2 tbsp Butter (Homemade or Store-Bought)
- 2 tsp Jeera (Cumin Seeds) or Sesame Seeds
- 2 tsp Red Chilli Powder (Optional)
- Warm Water, as needed
- Salt, to taste
- Oil, for deep frying
- In an idly pot or pressure cooker, place the maida over the idly plate and steam cook it for 10 minutes. After steaming, the maida will slightly change in color and form lumps. Spread the steamed maida on a plate or paper and allow it to cool for 2 hours.
- Break the lumps using your hands or grind them in a mixer using the pulse mode. Then, sieve the maida to obtain a smooth murukku flour.
- In a bowl, add the sieved maida, jeera, butter, and salt. Gradually pour warm water little by little and knead it into a smooth dough. The dough should not be dry, as that would make it hard to press. For a spicy version, add red chilli powder for both flavor and color.
- Use a star-shaped achu (press nozzle) for shaping the murukku. Take the murukku press and stuff a portion of the dough into it. You can also use a small piece of butter paper or the backside of a ladle to make a circular pattern. Alternatively, you can directly create the pattern in the oil.
- Heat oil in a kadai. Drop a small piece of dough into the oil to check if it immediately rises. This indicates that the oil temperature is perfect for frying. Carefully drop the shaped murukku into the oil and fry on both sides until the sizzling sound subsides, and the murukku turns golden brown.
- Once fried, drain the murukku on a kitchen towel to remove excess oil and store it in an airtight container.
