Masala Ribbon Pakoda

  • ½ cup roasted gram dal
  • 2 cups rice flour
  • ½ cup besan (gram flour)
  • 1 tsp chilli powder
  • ¼ tsp turmeric
  • Pinch of hing (asafoetida)
  • 2 tbsp white sesame seeds
  • ¾ tsp salt
  • 2 tbsp hot oil
  • Water, for kneading
  • Oil, for frying

  1. Grind ½ cup of roasted gram dal to a fine powder using a mixer jar.
  2. Transfer the powdered dal to a large mixing bowl.
  3. Add 2 cups of rice flour, ½ cup of besan, 1 tsp of chilli powder, ¼ tsp of turmeric, a pinch of hing, 2 tbsp of white sesame seeds, and ¾ tsp of salt. Mix well to combine.
  4. Add 2 tbsp of hot oil and mix well. Crumble and mix until the flour is moist.
  5. Gradually add water as needed and knead the mixture into a smooth and nonsticky dough.
  6. Attach a line-shaped mold to the chakli maker.
  7. Stuff the dough into the chakli maker and press it directly into hot oil.
  8. Fry the ribbon pakodas on medium flame on both sides until they turn golden brown and crisp.
  9. Drain the fried pakodas on a kitchen paper to remove excess oil.

Garlic Ribbon Pakoda

  • ½ cup roasted gram dal
  • 6 cloves of garlic
  • Few curry leaves
  • 2 cups rice flour
  • ½ cup besan (gram flour)
  • ½ tsp pepper powder
  • Pinch of hing (asafoetida)
  • 2 tbsp black sesame seeds
  • ¾ tsp salt
  • 2 tbsp butter, softened
  • ¾ cup coconut milk
  • Water, for kneading
  • Oil, for frying

  1. Grind ½ cup of roasted gram dal, 6 cloves of garlic, and a few curry leaves to a fine powder using a mixer jar.
  2. Transfer the powdered mixture to a large mixing bowl.
  3. Add 2 cups of rice flour, ½ cup of besan, ½ tsp of pepper powder, a pinch of hing, 2 tbsp of black sesame seeds, and ¾ tsp of salt. Mix well.
  4. Add 2 tbsp of softened butter and mix until crumbled and moist.
  5. Pour ¾ cup of coconut milk into the mixture and mix well.
  6. Gradually add water as needed and knead the mixture into a smooth and nonsticky dough.
  7. Attach a line-shaped mold to the chakli maker.
  8. Stuff the dough into the chakli maker and press it directly into hot oil.
  9. Fry the garlic ribbon pakodas on medium flame on both sides until golden brown and crisp.
  10. Drain the fried pakodas on a kitchen paper to remove excess oil.
