Ingredients

For the Bhajni flour:

  • 2 cups rice flour
  • 1 cup roasted chana dal (split Bengal gram)
  • 1/2 cup urad dal (split black gram)
  • 1/4 cup whole wheat flour
  • 1/4 cup coriander seeds

For the dough:

  • Bhajni flour (prepared from above)
  • 2 tablespoons hot oil
  • Water, as needed

For frying:

  • Oil, for deep frying

Instructions

  1. Preparing the Bhajni flour:

    1. Dry roast the chana dal, urad dal, coriander seeds, cumin seeds, and sesame seeds in a pan until aromatic and slightly golden.
    2. Allow the roasted ingredients to cool and grind them into a fine powder.
    3. In a mixing bowl, combine the rice flour, whole wheat flour, ground spice mixture, red chili powder, turmeric powder, and salt. Mix well.
    4. Your Bhajni flour is now ready for use.
  2. Making the dough:

    1. In a large mixing bowl, take the Bhajni flour and add hot oil to it. Mix well until the oil is evenly incorporated.
    2. Slowly add water, little by little, and knead into a firm dough. The dough should be pliable and smooth.
    3. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
  3. Shaping and frying the Sticks:

    1. Divide the dough into small portions and roll each portion into a cylindrical shape, resembling sticks.
    2. Meanwhile, heat oil in a deep frying pan on medium heat.
    3. Gently slide a few Bhajni Sticks into the hot oil and fry them until golden brown and crispy.
    4. Remove the fried Sticks from the oil and drain them on a kitchen paper towel to remove excess oil.
    5. Allow the Sticks to cool completely before storing them in an airtight container.
