Introduction
Ingredients
For the Bhajni flour:
- 2 cups rice flour
- 1 cup roasted chana dal (split Bengal gram)
- 1/2 cup urad dal (split black gram)
- 1/4 cup whole wheat flour
- 1/4 cup coriander seeds
- 2 tablespoons cumin seeds
- 2 tablespoons sesame seeds
- 1 tablespoon ajwain (carom seeds)
- 1 tablespoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
For the dough:
- Bhajni flour (prepared from above)
- 2 tablespoons hot oil
- Water, as needed
For frying:
- Oil, for deep frying

Preparing the Bhajni flour
- Dry roast the chana dal, urad dal, coriander seeds, cumin seeds, and sesame seeds in a pan until aromatic and slightly golden.
- Allow the roasted ingredients to cool and grind them into a fine powder.
- In a mixing bowl, combine the rice flour, whole wheat flour, ground spice mixture, red chili powder, turmeric powder, and salt. Mix well.
- Your Bhajni flour is now ready for use.

Making the dough
- In a large mixing bowl, take the Bhajni flour and add hot oil to it. Mix well until the oil is evenly incorporated.
- Slowly add water, little by little, and knead into a firm dough. The dough should be pliable and smooth.
- Cover the dough with a damp cloth and let it rest for 15-20 minutes.

Shaping and frying the Chakli
- Divide the dough into small portions and roll each portion into a cylindrical shape.
- Take a Chakli maker (also known as a Chakli press) and choose a disc with a spiral shape.
- Grease the Chakli maker with a little oil, and place a portion of the dough inside it.
- Press the dough in a circular motion, shaping it into a spiral pattern onto a greased plate or butter paper.
- Repeat the process with the remaining dough portions, making sure to leave enough space between each Chakli to prevent them from sticking together.
- Meanwhile, heat oil in a deep frying pan on medium heat.
- Gently slide a few Chaklis into the hot oil and fry them until golden brown and crispy.
- Remove the fried Chaklis from the oil and drain them on a kitchen paper towel to remove excess oil.
- Allow the Chaklis to cool completely before storing them in an airtight container.
