Ingredients

  • 1 Cup Rice Flour
  • 2 tbsp Besan Flour (Gram Flour)
  • 1.5 tbsp Fried Gram Flour (Pottukadalai Mavu)
  • 1 tsp Jeera (Cumin Seeds) or Sesame Seeds
  • 1/4 tsp Hing (Asafoetida)
  • 2 tsp Butter (Homemade or Store-Bought)
  • Salt, as required
  • Water, as required
  • Oil, for deep frying

Instructions

  1. Start by grinding the fried gram in a mixer to achieve a smooth powder.
  2. Measure all the ingredients and keep them readily available.
  3. In a pan, dry roast the besan flour on low flame for about 1 minute, or until the raw smell disappears.
  4. Sift the rice flour using a sieve. Add the roasted besan flour and fried gram flour, then sieve all the dry ingredients together.
  5. In a wide mixing bowl, combine the sieved flours, jeera or sesame seeds, hing, and butter.
  6. Add the required amount of salt and gradually mix in water, little by little, to form a soft, pliable dough. The dough should be slightly sticky but not dry, as this makes it easier to press.
  7. Grease the chakli press with oil, take a portion of the dough, and stuff it into the press using a star achu (nozzle). Keep the remaining dough covered with a damp cloth to prevent drying.
  8. Heat oil in a kadai. Check the oil temperature by dropping a small piece of dough; if it rises immediately, the oil is at the right temperature. Hold the chakli press over the oil and gently press it; the murukku will fall automatically. Fry in batches to avoid overcrowding the oil. Flip the murukku when it's half cooked and adjust the flame as needed.
  9. Continue turning the murukku until it turns golden brown and the sizzling sound in the oil subsides. Drain the fried murukku on a kitchen towel and repeat the process with the remaining dough.
  10. Enjoy the delectable Butter Murukku with a steaming cup of filter coffee.
