Ingredients

  • 2 cups Wheat Flour (Atta)
  • 1/4 cup Rice Flour
  • 1 tsp Cumin (Jeera)
  • 1/4 tsp Turmeric Powder
  • 1 tsp Kashmiri Red Chilli Powder
  • Pinch of Hing (Asafoetida)
  • 1 tsp Salt
  • Water, for kneading
  • Oil, for frying

Instructions

  1. Begin by placing a clean cotton cloth in a bowl. Add 2 cups of wheat flour and 1/4 cup of rice flour. Cover the flours tightly by folding the cloth. Place this bowl in a cooker and steam for 15 minutes without the whistle.
  2. After steaming, open the cooker. The flours would have hardened. Break any lumps and sieve the flours to prevent further lumps. The flour should be slightly warm while sieving.
  3. Add 1 tsp of cumin, 1/4 tsp of turmeric powder, 1 tsp of Kashmiri red chilli powder, a pinch of hing, and 1 tsp of salt to the sieved flours. Mix well, ensuring the spices are evenly combined.
  4. Gradually add 1/2 cup of water and knead the dough. Knead until you achieve a smooth and soft dough, adding water as needed.
  5. Attach the star-shaped mold to the chakli maker and grease it with some oil to prevent the dough from sticking.
  6. Shape the dough into a cylindrical form and place it inside the chakli maker. Tighten the lid and start preparing chaklis.
  7. On a wet cloth or butter paper, create small spiral-shaped chaklis by pressing the chakli maker. Seal the ends to prevent them from falling apart during frying.
  8. Heat oil in a pan for deep frying. Once the oil is hot, slide one chakli into the oil at a time. Alternatively, you can also bake the chaklis in a preheated oven at 180 degrees Celsius for 15 minutes.
  9. Flip the chaklis and fry them on medium flame until they turn crispy and golden brown from both sides.
  10. Once fried, place the chaklis on a paper towel to remove excess oil.
  11. Finally, once the chaklis are cooled, enjoy the delicious Aate Ki Chakli. You can store them in an airtight container for up to 2 weeks.
