How to Make Kerala Style Idiyappam:
- In a large bowl, take 2 cups of roasted rice flour and 1/2 tsp salt. You can also use idiyappam flour.
- In a saucepan, bring 3 cups of water and 1 tsp oil to a boil.
- Add the boiled water in batches to the rice flour.
- Mix well using a spoon. Add hot water in batches until the flour turns moist.
- Knead the dough for 5 minutes to make it smooth and non-sticky. Adjust the water as needed.
- Grease the idiyappam mould with oil and stuff in the dough.
- Press the idiyappam into a spiral shape onto a greased plate.
- Steam for 7 to 10 minutes.
- Enjoy the idiyappam with vegetable stew or store in a casserole if serving later.
