Ingredients

  • 1 cup besan (bengal gram flour)
  • 2 1/2 tbsp oil
  • 1/2 tsp carom seeds (ajwain)
  • 1 tsp papad khar
  • Salt to taste
  • Oil for deep-frying

Method

  1. In a deep bowl, mix besan, oil, carom seeds, papad khar, and salt. Knead into a soft dough using enough water till smooth.
  2. Transfer the powdered mixture to a large mixing bowl.
  3. Take a small portion of the dough and roll into a cylindrical roll in between your palms. Place it on a flat surface and gently stretch it vertically from one end to the other to form a long strip.
  4. Heat oil in a deep non-stick pan. Deep-fry a few fafdas at a time on a medium flame till they turn crispy and light brown. Drain on absorbent paper.
  5. Cool the fafda slightly and serve or store in an airtight container for later use.

 

Tips:

  1. The dough should be kneaded just before deep-frying.
  2. Apply uniform pressure while stretching the dough for even shaping.
  3. Shape 2 to 3 fafdas at a time and deep-fry simultaneously.
  4. Cool the fafdas completely before storing to maintain their crispiness.
  5. Papad khar is a seasoning that enhances crispness and expansion. Experiment with flavors by adding your favorite spices to the dough.
