Ingredients
- 2 cups Rice Flour, fine
- 1 cup Maida / Plain Flour
- 1 tsp Salt
- 2 tbsp Butter, room temperature
- 1/2 tsp Turmeric
- 1 tsp Red Chilli Powder
- 2 tbsp Sesame Seeds (Til)
- Pinch of Hing (Asafoetida)
- Water, for kneading
- Oil, for frying
- In a large mixing bowl, combine 2 cups of rice flour, 1 cup of maida, and 1 tsp of salt.
- Add 1/2 tsp of turmeric, 1 tsp of red chilli powder, 2 tbsp of sesame seeds, a pinch of hing, and another 1 tsp of salt. Mix well, ensuring all the dry ingredients are well combined.
- Crumble and add 2 tbsp of room temperature butter to the dry mixture. Mix until the butter is well incorporated with the flour.
- Slowly add water and start kneading the dough. Knead until you achieve a smooth and soft dough, adding water as needed.
- Attach the star-shaped mold to the chakli maker and grease it with a little oil to prevent the dough from sticking.
- Shape the dough into a cylindrical form and place it inside the chakli maker. Tighten the lid and start preparing chaklis.
- On a wet cloth or butter paper, create small spiral-shaped chaklis by pressing the chakli maker. Seal the ends to prevent them from falling apart during frying.
- Heat oil in a pan for deep frying. Once the oil is hot, slide one chakli into the oil at a time.
- Flip the chaklis and fry them on medium flame until they turn crispy and golden brown from both sides.
- Once fried, place the chaklis on a paper towel to remove excess oil.
- Once cooled, you can enjoy these delicious Instant Chaklis. Store them in an airtight container to maintain their freshness for up to 2 weeks.
