- 2 Cups Rice Flour (Homemade or Store-Bought)
- ¼ Cup Moong Dal Flour
- 1 tsp Jeera (Cumin Seeds)
- 2 tbsp Butter
- ½ Cup Coconut Milk (Thick)
- Water, as required
- Salt, as required
- Oil, for deep frying
- Begin by dry roasting 1/4 cup of moong dal until it turns golden. Let it cool down and then grind it into a fine powder. Sieve the ground moong dal flour to remove any lumps.
- Measure and prepare all the other ingredients. In a wide vessel, combine rice flour, sieved moong dal flour, butter (at room temperature), and jeera.
- Add the required amount of salt and pour in 1/2 cup of thick coconut milk.
- Gradually add water while kneading the dough. The dough should be soft and pliable; avoid making it too stiff, as it will be hard to press. Keep the dough covered to prevent it from drying.
- Traditionally, a star achu (mould) is used to shape this murukku. Grease the presser with a little oil and place a portion of the dough inside.
- Use a ladle to create swirls on the backside; this method helps in achieving a good shape. Experienced individuals can make swirls directly in the oil.
- Heat oil in a Kadai or pan. Test the oil temperature by dropping a small piece of dough – if it rises immediately, the oil is ready. Gently place 2 or 3 murukku in the oil based on the Kadai's size.
- Fry the murukku over medium flame on both sides until they turn golden brown. The sizzling sound will diminish. Remove them as the sizzling sound ceases; the dough's color makes browning identification tricky.
- Repeat the frying process for the remaining dough.
- Drain the fried murukku on a kitchen towel. Pour a little oil if needed and fry again; this step helps in even cooking and absorption of excess oil.

Notes and Tips
- Sieve the moong dal flour once or twice to prevent murukku breakage.
- You can also sieve 1/8 cup of roasted channa dal flour as an alternative.
