In this blog post, we bring you an easy and authentic Rice Murukku recipe that you can make at home and enjoy its mouthwatering flavors.Ingredients
- 2 cups rice flour
- 1 cup water
- 1 tsp chili powder
- 1 tsp sesame seeds (black or white)
- 1 generous pinch hing (asafoetida)
- Salt, as required
- 2 tsp ghee
- Oil, for deep frying
- Begin by preparing all the ingredients. You can choose between black sesame seeds, white sesame seeds, cumin seeds, or ajwain based on your preference. If making for festivals, skip the chili powder and use only salt.
- In a pan, bring 1 cup of water to a rolling boil. Add chili powder, sesame seeds, and the required amount of salt to the boiling water.
- Reduce the flame and add a generous pinch of hing (asafoetida).
- Pour in 2 tsp of ghee for added flavor.
- Slowly add the rice flour while giving a quick mix. Refer to the video for visual guidance.
- Turn off the flame and cover the mixture for about 5 minutes. This step helps in getting the right texture.
- After 5 minutes, the mixture will appear crumbled.
- Gradually begin kneading the dough, adding water little by little. The dough should be soft and pliable, not stiff. Keep it covered to prevent drying.
- Grease the murukku presser with a little oil. Take a portion of the dough and place it inside the presser.
- Grease the backside of a ladle with a bit of oil. Use it to make swirls on the presser, shaping the murukku.
- Alternatively, if experienced, you can make swirls directly in the oil.
- Heat oil in a Kadai or pan. Test the oil temperature by dropping a small piece of the dough – if it rises immediately, the oil is ready. Gently place 2 or 3 murukku in the oil, based on the Kadai's size.
- Fry the murukku over medium flame on both sides until they turn golden brown and the sizzling sound diminishes.
- Remove the fried murukku from the oil and let them drain on a kitchen towel to remove excess oil.
- Repeat the frying process for the remaining dough.
- Allow the Rice Chakli to cool before storing them in an airtight container.
