Introduction

Ingredients
Ragi Murukku and Kodubale Recipe- 3/4 cup Ragi Flour (Finger Millet/Nagli)
- 3/4 cup Bajra Flour (Pearl Millet)
- 1-1/2 cups Rice Flour
- 1 cup Gram Flour (Besan)
- 1 cup Urad Dal Flour
- 1 tablespoon Cumin Seeds (Jeera)
- 2 teaspoons Red Chilli Powder
- 1/4 teaspoon Asafoetida (Hing)
- 1 tablespoon Salted Butter, melted and warm
- 2 cups Lukewarm Water
- Salt, to taste
- Oil, for deep frying
- Dry roast the four flours until aromatic for about 4 to 6 minutes on medium heat. Allow them to cool completely after switching off the heat.
- In a mixing bowl, combine the roasted flours, red chilli powder, cumin seeds, and salt. Pour in the melted butter and mix thoroughly.
- Gradually add lukewarm water, little by little, to the mixture and knead it into a soft and pliable dough.
- Divide the dough into 3 or 4 sections and shape each section into cylinders.
- For Kodubale:
- Take small portions of the dough, roll them into balls, and then flatten and shape them into tiny bangles. Set them aside.
- For Chakli:
- Load the chakli maker with a portion of the dough. Press the dough out of the maker in tiny concentric circles or strands onto a greased paper or plastic sheet.
- Heat oil in a deep frying pan over medium-high heat. To test if the oil is hot enough, drop a tiny ball of dough into the oil; if it sizzles and rises to the surface, the oil is ready.
- Reduce the heat to medium and gently lower the chaklis and kodubales into the oil. They will initially sink and foam before rising to the surface.
- Flip them over to cook the other side until they turn a golden brown color.
- Remove the snacks from the oil and drain them on a paper napkin or sieve over a bowl to remove excess oil. Allow them to cool completely before storing.
- Store the Ragi Murukku and Kodubale in airtight containers in a cool, dark place.
