Ingredients

  • 1.5 Cups Rice Flour (Homemade or Store-Bought)
  • ¼ Cup Besan Flour
  • 4 - 6 Flakes Garlic (Big)
  • 1 tsp Chilli Powder
  • 1 tbsp Butter
  • 1 tsp Sesame Seeds
  • Salt, as required
  • Water, as required
  • Oil, for deep frying

Instructions

  1. Start by measuring and preparing all the ingredients. In a mixer, add the chopped garlic.
  2. Grind the garlic to a smooth paste, adding a little water. Ensure the paste isn't coarse to avoid getting stuck in the chakli press.
  3. In a wide bowl, combine rice flour, besan flour, chilli powder, sesame seeds, butter, and the required amount of salt.
  4. Incorporate the groundgarlic paste and gradually add water while kneading the dough.
  5. Pour 2 tbsp of hot oil into the dough and knead it again. The dough should be soft and pliable, not stiff. Cover it to prevent drying.
  6. Grease the murukku presser with a little oil. Place a portion of the dough into the presser.
  7. Using a ladle, make swirls on the backside of the ladle; this technique yields a good shape. If experienced, you can make swirls directly in the oil.
  8. Heat oil in a Kadai or pan. Test the oil temperature by dropping a small piece of dough – if it rises immediately, the oil is ready. Gently place 2 or 3 murukku in the oil based on the Kadai's size.
  9. Fry the murukku over medium flame on both sides until they turn golden brown. The sizzling sound will diminish. To prevent burning, remove them as the sizzling sound ceases; ragi flour's color makes browning identification tricky.
  10. Repeat the frying process for the remaining dough.
  11. Drain the fried murukku on a kitchen towel. Pour a little oil if needed and fry again; this step helps in even cooking and absorption of excess oil.
